Chef Francisco Rodriguez prepares French dishes, such as medallions of trout smothered in fennel and onion. The stately restaurant, built in 1945 as a private mansion, has been declared a national monument. The dining rooms are strewn with antiques imported by aristocratic Bogotano families.
